Superfood e.g. as dinner!
Today we harvested fresh beetroots from our garden for the first time. Of course I prepared them the Ikarian way.
I peeled them and cooked them together with the leaves. Then you add salt and pepper. A little feta cheese, lemon juice and of course the wonderful olive oil from our garden make it a delicious and super healthy meal. Beetroot provides vitamins A, C, B and folic acid...
But that's not all: beetroot contains betaine, which lowers the risk factor homocysteine for heart disease, as well as anthocyanins, which have an anti-cancer effect, and nitrate, which, among other things, lowers blood pressure. All of these substances make beets a miraculous root vegetable.
