Today I tried out something new. My neighbour gave me a recipe for zucchini flowers stuffed with herbal yoghurt. In combination with the olive oil from our olive groves it tasted delicious and is very easy to prepare. It’s the simple pleasures that make life beautiful!
Ingredients for 4 persons:
3-4 medium-sized zucchini flowers per person
For the filling
- 500g Greek yoghurt
- 50ml Avramidis Olive Oil 100 years
- 1 onion
- 1 clove of garlic
- some parsley and basil
- 150g feta cheese
Chop the onion, garlic, parsley and basil, and mix with the olive oil and yoghurt. Season to taste with salt and pepper. Fill the washed flowers with the herbal yoghurt and cook in a pan over medium heat. Finally, sprinkle the feta cheese over the zucchini flowers and let it melt briefly with the lid covered.
